Chicken cheese kottu
Here's a delicious Chicken Cheese Kottu recipe—a popular Sri Lankan street food made with chopped roti, chicken, vegetables, and melted cheese.
Ingredients:
For the Chicken:

250g boneless chicken (cubed)

1 tsp chili powder

1/2 tsp turmeric powder

1 tsp curry powder

1/2 tsp black pepper

1 tsp ginger-garlic paste

1 tbsp oil

Salt to taste
For the Kottu:

4 parathas (or godhamba roti), cut into small strips

1 medium onion (sliced)
-
1 small carrot (julienned)
-
1/2 cup cabbage (shredded)

2 green chilies (sliced)
-
1 medium tomato (chopped)
-
1/2 cup chicken stock
-
1 tbsp soy sauce
-
1 tbsp oyster sauce (optional)
-
1/2 tsp black pepper
-
1/2 tsp salt (adjust as needed)

2 eggs (beaten)
-
1 cup mozzarella cheese (or any melting cheese)
-
2 tbsp butter
-
1 tbsp oil
Instructions:
Step 1: Cook the Chicken

In a bowl, marinate the chicken with chili powder, turmeric, curry powder, black pepper, ginger-garlic paste, and salt.

Heat 1 tbsp oil in a pan and cook the chicken until tender and golden brown. Set aside.
Step 2: Prepare the Kottu

In the same pan, add butter and a little oil. Sauté onions, green chilies, carrots, and cabbage for 2–3 minutes.

Add the chopped tomatoes and cook until they soften.

Pour in the chicken stock, soy sauce, oyster sauce, black pepper, and salt. Stir well.
Step 3: Mix the Ingredients

Push the vegetables to the side of the pan and add the beaten eggs. Scramble them until fully cooked.

Add the cooked chicken and mix everything together.

Toss in the chopped roti strips and stir-fry for 2–3 minutes until well combined.
Step 4: Add Cheese

Sprinkle the mozzarella cheese over the kottu and mix until melted and gooey.

Taste and adjust seasoning if needed.
Step 5: Serve

Serve hot with chili paste or ketchup on the side.
